Fillet of Fish in Herb and Curry Sauce
125g firm fish fillet – flake, John Dory etc
1 teaspoon curry powder
3 spring onions, sliced
Oregano
Thyme
¼ cup water
Heat as non-stick pan; cook fish for 5-6 minutes each side, or until cooked. Remove from pan and keep warm. Place water seasoned with oregano and thyme in same pan, slowly bring to simmering point and add curry powder, and cook. Stirring for 2 minutes. Add spring onions and garnish with lemon and chives.
